Product excerpts are stored in a module separate from the Product module, unlink unlike cover and spread files. To delete an excerpt:
Navigate to the Excerpt module (Admin > Content > Excerpts)
Find Use the search form to find the excerpt in question
Click the trash can icon

in the “Delete” column
